Blend the bread and 2 chili peppers until coarse crumbs (about 1½ cups). Transfer the crumbs to a small bowl. Mix with 2 tbsp of olive oil; season with salt and pepper.
- Rye bread: 1 piece
- Chile de arbol pepper (dried): 4 pieces
- Olive oil: 5 tablespoon
- Coarse salt: to taste
- Ground black pepper: to taste

Heat a medium-sized skillet over medium heat and sauté the breadcrumbs, stirring frequently, until dry and golden brown for about 5 minutes; remove from heat.

Preheat the oven to 220˚C. Toss the broccolini on a rimmed baking sheet with 2 tbsp of oil and season with salt and pepper. Roast, stirring occasionally, until tender and bright green, about 5-8 minutes. Let cool slightly. Transfer the broccolini to a medium bowl and mix with 2 tbsp of Parmesan cheese and the remaining chili pepper; season with salt and pepper.

- Olive oil: 5 tablespoon

- Grated Parmesan cheese: 4 tablespoons

Place half of the broccolini on a baking sheet and sprinkle with half of the cheddar cheese. Add the remaining broccolini and sprinkle with cheddar cheese. Top with breadcrumbs and 2 tbsp of parmesan. Bake for 10-15 minutes until the breadcrumbs are golden and the cheese is melted.
