Preheat the oven to 100 degrees. Cut the carrot and onion into large pieces. Place the pork, carrot, and onion in a baking dish, add water, and bake for about 2 hours. Remove from the oven and let cool to room temperature.

Prepare the glaze. Mix egg yolks, honey, espresso, and mustard. Preheat the oven to 220 degrees. Remove the pork from the pan, place it on another pan, brush with glaze and sprinkle with breadcrumbs. Bake until golden brown. Slice the finished ham and serve with mustard. Enjoy your meal!
