First, clean the onion, cut it in half, and chop it into thin half-rings. Then, cut the sweet pepper in half, remove the seeds, and dice it into 1 cm cubes. Peel the chorizo and cut it into pieces the same size as the pepper.

Wash the potatoes and cut them into 1 cm cubes without peeling. Place in a pot, cover with boiling water, add salt, cover with a lid and boil for 5 minutes. Transfer to a colander and cover with a towel to absorb the steam.

Then heat 2 tablespoons of oil in a pan, add onion, pepper, and minced garlic. Sauté, stirring, for 6 minutes until soft and golden. Push the vegetables to one side of the pan, place the chorizo on the other side - brown for a couple of minutes over high heat. Sprinkle with paprika, mix everything, and transfer to a plate.
