Preheat the oven to 200 degrees, line a small baking tray with foil.

In a bowl, mix mustard, olive oil, and onion.
- Grainy mustard: 4 teaspoons
- Olive oil: 1 tablespoon
- Chopped chives: 1.5 tablespoon

Season the salmon fillet with salt and pepper and place it skin-side down on the prepared baking sheet.
- Salmon fillet: 4 pieces
- Ground black pepper: to taste

Grease the fish with a mustard mixture on top. Bake for 6 minutes.

Then turn on the top grill in the oven and grill the fish about 15 cm from it for 4 minutes, until the mustard crust is browned.
