Pork stewed in creamy sauce with green beans is a harmonious blend of tender meat and rich creamy flavor. This recipe draws inspiration from European cuisine but is enriched with notes of Armenian spices and the freshness of herbs. Marinated pork, sautéed with onions and stewed in a fragrant sauce made from kefir, cream, herbs, and soy sauce acquires softness and depth of flavor. The side dish features green beans lightly stewed to maintain their crunchy texture. The dish is delicate with a subtle tanginess from the kefir and rich creaminess, while the spiciness of the spices adds an exquisite complexity. It is perfect for a cozy family dinner or a festive gathering.

Cut the pork into small cubes, season with some Armenian spices (including coriander, savory, tarragon, black and red pepper), slice the onion into half rings and marinate the meat with the onion for 15 minutes. (note: do not salt the meat!!!)

In a hot pan, sauté one clove of garlic (crushed first) in a small amount of sunflower oil for aroma (remove the garlic after frying, otherwise it will be bitter).

Place our meat with onions on the still hot pan and fry for 5 minutes to keep the meat's shape. Pour in a little more sunflower oil, reduce the heat to minimum, cover with a lid, and simmer for 30-40 minutes.

In a blender, whip 3.2% kefir (as a base) with cilantro, parsley, garlic, cream, and soy sauce. The sauce will be the base for subsequent braising, so its flavor will transfer to the meat. The sauce should be creamy, salty, with a specific taste of soy sauce. I did it this way - blended kefir (about 1.5 cups) with parsley, cilantro, and garlic, tasted the base. If something was missing, I added it. Then I poured in a bit of cream and blended again to make the flavor creamy. Then added soy sauce. For 1.5 cups, I used 3 cloves of garlic, 100 grams of cream, and 25 grams of soy sauce.
- Kefir: 1.5 glass

Pour all our sauce over the meat and simmer for another 15 minutes until the meat is tender.

While the meat is stewing, put the beans in a pan, lightly salt them, and stew for about 15 minutes.
