For the sauce, mix three-quarters of a tablespoon of water, the same amount of light soy sauce, dark soy sauce, rice vinegar, ketchup, and chili paste in a saucepan. Place on heat, simmer slightly, add sugar and honey. Stir until fully dissolved. Bring to a boil, simmer for a minute, and remove from heat.

Cut the chicken fillet into strips half a centimeter thick and marinate in the remaining soy sauce for 10 minutes.

Boil the wheat noodles until cooked.

Cut the carrot and sweet pepper into thin strips. Heat the wok, add vegetable oil, toss in some minced garlic and ground ginger, add the meat and fry until golden brown while stirring constantly. Add the carrot, pepper, and beans; stir-fry for 20 seconds. Add the noodles and sauce, mix well and fry a little more.
