Vegetable casserole with pumpkin is a cozy dish of European cuisine that combines the tenderness of baked vegetables and the creamy texture of the casserole. Root vegetables like potatoes, carrots, turnips, and onions give it a rich and multifaceted flavor, while sweet pumpkin adds a light caramel note. Topped with fresh herbs and melted cheese, it acquires an appetizing golden crust. Kefir or sour cream make the dish juicy and soft. Historically, casseroles emerged as a way to prepare a hearty and healthy meal from simple ingredients. This variation is especially good in the autumn-winter season when vegetables reach their maximum flavor. It can be served as a standalone dish or as a side to meat. The casserole will adorn any family dinner, filling the home with warmth and aroma.
