Preheat the oven to 220 degrees. Line the baking sheet with parchment paper.

In a wide and shallow bowl, beat the egg whites with a teaspoon of salt until frothy.
- Egg white: 3 pieces
- Salt: to taste

Cut each potato into 6 long wedges and submerge in a bowl with egg whites. Remove slices from the foam one by one, shaking off excess liquid, and sprinkle with parmesan on all sides over a plate.

Place the slices on a baking sheet and bake for 30 minutes without flipping, until the slices are nicely browned while remaining soft inside.
