Cut a piece of halibut in half. Chop the leek, shallot, and carrot coarsely, and cut the tomatoes in half.
- Halibut fillet: 300 g
- Leek: 2 stems
- Shallots: 2 heads
- Young carrots: 4 pieces
- Cherry tomatoes: 10 pieces

Line a baking dish or tray with foil, drizzle with olive oil, and add white wine. Place the vegetables, then the fish on top, add bay leaves and other spices. Cover with foil.
- Olive oil: 2 tablespoons
- Dry white wine: 60 ml
- Bay leaf: 2 pieces
- Tarragon: 2 stems
- Pink pepper: to taste
- Ground black pepper: to taste
