Onion cutlets with herbs are a simple yet surprisingly aromatic dish of Russian cuisine, combining the rich flavor of caramelized onions and fresh herbs. Light and airy, they develop an appetizing golden crust when fried, while the combination of potatoes and carrots makes them tender inside.

Peel the onion, cut it into strips, and pour boiling water over it for 5-7 minutes.
- Onion: 10 pieces

Drain the water and add flour to the onion.
- Wheat flour: 1.5 glass

Chop the greens.
- Dill: 1 bunch
- Parsley: 1 bunch
- Celery: 1 bunch

Grate raw potatoes and carrots on a coarse grater.

Fry the cutlets like pancakes, browning them on both sides until golden.
