Dirty spelt

To make spelt dirty, take clean spelt and add chicken liver to it. The liver will boil over and visually dirty the spelt. The dish will end up looking scary, but liver lovers will appreciate it. You will have to soak the spelt well in advance, otherwise it will take several hours to cook until soft.

In a deep skillet over medium heat, heat 2 tablespoons of vegetable oil, add spelt and sauté for two minutes while stirring. Add thyme (tied in a bundle) and pour in five cups of water. Cover and cook for ten minutes, then add two teaspoons of salt and cook for another thirty minutes until done. Drain in a colander and cool down; discard the thyme.
- Vegetable oil: 4 tablespoons
- Spelt: 400 g
- Thyme: 1 bunch
- Coarse salt: to taste

In the same saucepan, heat 2 tablespoons of oil, add sliced sausages and liver, and fry for four minutes. Add chopped onion, celery, garlic, spices, and bay leaf. Sauté for two minutes. Pour in a cup of water and bring to a boil. Cook for eight minutes until the liquid reduces by half.
- Vegetable oil: 4 tablespoons
- Pork sausages: 230 g
- Chicken liver: 230 g
- Onion: 2 heads
- Celery stalk: 3 pieces
- Garlic: 2 cloves
- Ground cumin (zira): 2 teaspoons
- Ground cayenne pepper: 0.3 teaspoon
- Bay leaf: 2 pieces

Add the cooked spelt and cook for about five more minutes until the liquid is fully absorbed. At the end, add the chopped onion and celery leaves.
