Wash and thoroughly dry the chicken fillet. Chop into small cubes.
- Chicken fillet: 500 g

Grate the cheese on a coarse grater.
- Cheese: 200 g

Chop the greens finely. I prefer to use a mix of parsley and dill. But you can add any according to your taste.
- Green: 1 bunch

Mix chopped chicken fillet, cheese, greens, and egg.

Add salt and spices. I use a spice mix (a small pinch of each): dried crushed garlic, paprika, thyme, rosemary, turmeric. You can skip them entirely or replace them with something else, like black ground pepper.

At the very end, we add potato starch. We mix thoroughly.
- Potato starch: 2 tablespoons

Heat the pan with vegetable oil.
- Vegetable oil: 50 ml

"The meat mixture" turns out to be quite liquid. We arm ourselves with a large spoon. It is with this that we will place the future cutlets on the hot frying pan.

Fry the chicken 'oladushki' on both sides until a delicious golden crust forms in an uncovered pan. It's better not to keep them too long, as the patties are thin and will quickly lose their juiciness.
