We remove the sharp part of the wing (phalange). We make a cut along the back. We turn it inside out. We cover it with film and press it down with our hand.

We salt the quail, sprinkle with pepper. Drizzle with olive oil. Sprinkle with ground ginger and add honey. Gently press the quail with hands.
