Bohemian Stewed Cabbage

Bohemian stewed cabbage is a traditional European dish with roots in Czech cuisine. It combines simplicity of preparation with rich flavor. Cabbage, slowly stewed with bacon and onions, gains tenderness and a light caramel note from added sugar. Cilantro, black pepper, and lemon juice add zesty accents, creating a complex yet harmonious taste. The flour makes the sauce tender and thick, coating each piece of cabbage. This dish pairs well with meat but can also serve as a standalone meal.

We clean, wash, and chop 200 grams of onion into small cubes. We cut 100 grams of smoked bacon into small pieces. We finely shred two kilograms of cabbage.

In a deep skillet or a thick-bottomed pot, heat 60 grams of vegetable oil, add bacon and onion, and sauté until the onion is translucent.

We add the shredded cabbage, mix it, cover with a lid, and simmer on low heat, stirring occasionally for about 30 minutes.
- Cabbage: 2 kg

After 30 minutes, add 2 teaspoons of salt, half a teaspoon of black ground pepper, one teaspoon of slightly crushed coriander seeds, 3 teaspoons of sugar, and the juice of half a lemon.
- Salt: 2 teaspoons

- Sugar: 3 teaspoons

Add 3 teaspoons of flour and mix everything well. Cover with a lid and let it simmer on low heat for 7-10 minutes.

We place the prepared cabbage in a deep dish and serve it as a standalone dish or as a side to meat.
