Add rice with finely grated lemon zest to boiling water. Cook the rice according to the package instructions.
- Basmati rice: 150 g

Chop the parsley. Cut the mushrooms into quarters. Finely chop the gherkins.

Place the pan over medium heat. Finely chop the garlic and onion. Heat olive oil in the pan and sauté the onion and garlic until soft. Remove from heat.

Cut the meat into thin long pieces the size of a pinky finger (cut so that the meat fibers are across the piece). Mix the meat with salt, pepper, and paprika. Set aside for a few minutes.

Heat a spoon of olive oil in a clean pan. Fry the meat until the pieces are golden brown and separate. Add mushrooms and half of the parsley, fry for another 2 minutes. Add onion and garlic.

If you want to add brandy, you need to do it carefully — it's likely that the alcohol will catch fire (that's normal, it should evaporate).

Add half of the sour cream and gherkins and cook for another minute.

Remove the pan from the heat, pour in lemon juice and the remaining sour cream. Mix well.
