Preheat the oven to 120 degrees.

Mix all dry ingredients in a bowl.
- Paprika: 100 g
- Fine white sugar: 50 g
- Brown sugar: 50 g
- Salt: 70 g
- Ground black pepper: 2 tablespoons
- Dry mustard: 1 teaspoon
- Ground cumin (zira): 1 tablespoon

Place the ribs on foil, meat side down. Poke several places with a knife.
- Pork ribs: 1 kg

Coat the ribs well with the spice mixture on all sides. Cover the ribs with foil on all sides and place them on a baking tray, meat side down.
- Paprika: 100 g

- Brown sugar: 50 g
- Salt: 70 g
- Ground black pepper: 2 tablespoons
- Dry mustard: 1 teaspoon
- Ground cumin (zira): 1 tablespoon

Bake in the oven for about 2 hours. Remove and cool for 15 minutes.

Raise the oven temperature to 175 degrees.

Open the foil and remove the liquid and fat that has formed. Brush the ribs on all sides with barbecue sauce.
- Ketchup: 150 g
- Apple cider vinegar: 20 g
- Sugar: 10 g
- Ground dried garlic: 1 teaspoon
- Ground chili pepper: 1 teaspoon
- Sea salt: 1 teaspoon
- Celery seeds: 1 teaspoon

Place the ribs in the oven with the meat side up, remove from the oven after 10 minutes and brush with sauce. Bake for 50 minutes, repeating the basting with sauce at least 4 times.

Divide into individual segments and serve with the same sauce.

For barbecue sauce, mix ketchup, apple cider vinegar, salt, sugar, and spices; add water if necessary. Bring to a boil and simmer for at least 5 minutes.
