Potato roll with meat filling is a tender and hearty dish of Ukrainian cuisine that combines airy potato dough with aromatic meat filling. Its roots trace back to traditional village recipes where potatoes and meat were staples. The roll is soft with a light crispy crust, and the filling reveals a rich flavor thanks to onions and spices. Baked in the oven, it becomes golden and appetizing, while added cheese gives it creamy tenderness. This dish is perfect for festive gatherings as well as cozy family dinners. It is served sliced with herbs and sour cream, enhancing the flavor nuances with freshness.

Boil the potatoes until cooked.
- Potato: 600 g

Fry the finely chopped onion, add the minced meat and fry until cooked. Drain the water from the potatoes, add oil and a cup of warm milk, mash and mix with a mixer. Add flour, salt, pepper, 3 eggs and mix well again.
- Onion: 1 piece
- Minced meat: 500 g
- Butter: 70 g
- Milk: 2 glasss
- Wheat flour: 2 glasss
- Salt: to taste
- Ground black pepper: to taste
- Chicken egg: 3 pieces

Add a glass of warm milk and stir. It results in a liquid dough.

Line the baking tray with parchment paper, grease with butter, sprinkle with breadcrumbs and potato seasoning. Pour in the batter and sprinkle with cumin.
- Butter: 70 g
- Breadcrumbs: 2 tablespoons
- Caraway: 1 tablespoon

We send it to a preheated oven at 180 degrees for 15 minutes (until golden brown). The dough is very delicate, a bit difficult to work with to avoid tearing, you can add flour to eliminate these issues, but I don't like to weigh down the dough with flour; I prefer it delicate and airy.

Cover the work surface with foil, flip the base onto it with the paper, remove the paper, and place the filling.
- Minced meat: 500 g

Sprinkle with grated cheese and finely chopped greens.
- Cheese: 150 g
- Green: 1 bunch

Carefully, using foil, we roll the roulade; if the dough cracks somewhere, it can be easily fixed later. We wrap it tightly in foil like a candy and send it back to the oven for another 15 minutes.

We take out and unfold.

Cut into portion-sized pieces, not too thin (can be sliced thin when cold).
