Beef with Oyster Sauce

Beef in oyster sauce is a typical Southeast Asian dish. It is best cooked, of course, in a wok, following all the rules: thinly sliced meat and vegetables are quickly fried over high heat. Broccoli florets are especially good - they remain crispy and bright. The oyster sauce included in the recipe looks like soy sauce, but it has a much richer taste. It is made from oyster extract, starch and sugar: Chinese housewives make it themselves, but it is easier to buy ready-made, of course.

1
Slice the beef fillet into thin pieces. Finely chop the ginger and slice the onion into thin half-rings. Break the broccoli into florets and boil for three minutes in boiling water. Cool down to prevent the florets from losing their green color.
- Beef fillet: 500 g
- Ginger root: 10 g
- Onion: 0.5 head
- Broccoli cabbage: 400 g

2
Heat a wok pan with vegetable oil and quickly fry the sliced meat until golden brown.
- Vegetable oil: 50 ml
- Beef fillet: 500 g

3
Add onion and ginger to the pan, and after a minute, add oyster sauce and broccoli. Fry for another minute or two, stirring constantly. Remove from heat and season with lemon juice and finely chopped cilantro.
- Onion: 0.5 head
- Ginger root: 10 g
- Oyster sauce: 50 ml
- Broccoli cabbage: 400 g
- Lemon: 0.5 piece
- Fresh cilantro (coriander): 10 g
