Steak with ponzu and mushroom butter

Steak with ponzu and mushroom butter is an exquisite dish that combines the tenderness of beef with the deep flavor of mushroom butter and citrus-soy notes of ponzu. This recipe, though rooted in British cuisine, is clearly inspired by Japanese culinary traditions where flavor balance plays a key role. Mushroom butter adds a rich, earthy aroma to the dish while ponzu brings freshness and zest with its sweet-sour undertone. The steak is prepared using minimal heat technique to retain the meat's juiciness. This steak is perfect for special occasions and romantic dinners, especially when served with a light side like fresh vegetables or rice. The perfect combination of flavors makes this dish a true culinary masterpiece.

1
Take 15 grams of dried white mushrooms and a glass of good olive oil. Pour the mushrooms with a glass of water, add 0.5 teaspoons of salt, and boil at a strong simmer until all the water evaporates.
- Dried mushrooms: 15 g
- Olive oil: 1 glass
- Soy sauce: 0.5 glass
2
Pour in a cup of oil and keep it on medium heat for 10 minutes. Let it cool, blend everything, and let it steep for three days.
- Olive oil: 1 glass
3
We place the meat on a very hot skillet and sear it for a minute on each side, just for the aroma. Then we remove it, cover it with foil, and wait for about 10 minutes. During this time, the heat will reach the center of the piece and soften the meat.
