Drain the canned chickpeas and dry them.
- Canned chickpeas: 500 g

Using a food processor, coarsely chop garlic, onion, and rosemary leaves, add chickpeas, parsley, and breadcrumbs (which can be slightly dried in the oven beforehand), and turn into a more or less homogeneous mixture.
- Garlic: 2 cloves
- Onion: 0.5 head
- Fresh rosemary: 2 stems
- Canned chickpeas: 500 g
- Parsley: 10 g
- White bread: 50 g

Transfer the minced meat to a bowl, add the fried and chopped walnuts, an egg, season with salt and pepper, and mix well. Let it sit for at least an hour.
- Walnuts: 90 g
- Chicken egg: 1 piece

In a large skillet, heat olive oil over medium heat; when it starts to shimmer, fry the chickpea-nut patties until golden brown, about four minutes on each side.

Dry the halved sesame buns in the oven, place a patty on each of the four bottom halves, cover with slices of tomato and red onion, and top with the upper halves of the buns.
