Roast the peppers in the oven or on the grill until the skin is charred. Transfer to a bowl, cover with plastic wrap, and let sit for 15 minutes. Then cut in half lengthwise, peel off the skin, and remove the seeds.

Meanwhile, preheat the oven to 200 degrees.

Thinly pound the chicken breasts with a meat mallet and place them on a work surface. Season with salt and pepper. Top the breasts with slices of prosciutto, then add halved peppers and sliced mozzarella. Roll tightly and place seam side down on parchment sheets. Fold the parchment into an envelope and place on a baking tray.
