In a small bowl, mix honey and vinegar. Add salt and pepper. Then, while constantly whisking, incorporate olive oil. Add finely chopped red onion, minced garlic, sliced olives, orange segments peeled and deveined, cut into small pieces, and parsley.

- Sherry vinegar: 3 tablespoons
- Coarse salt: to taste
- Freshly ground black pepper: to taste

- Garlic: 2 cloves
- Red onion: 0.5 head
- Pitted olives: 0.3 glass
- Chopped parsley: 0.3 glass
- Oranges: 1 piece

Salt and pepper the meat well.

Take a pan and place it on high heat. Heat it well and add some vegetable oil. Place the meat and fry for 6-8 minutes on each side for medium doneness. Transfer to a plate and cover with foil. Let it rest for 10 minutes.
