Sweet and sour pork with rice

Sweet and sour pork with rice is an amazing combination of flavors that has entered European cuisine under the influence of Asian gastronomic traditions. Tender pieces of pork tenderloin soaked in an exotic spice mix, fried to a golden crust and complemented by pineapple, create a rich flavor palette where sweet and sour notes blend perfectly. Ginger and garlic add spiciness, while fresh cilantro and sesame finish the composition with light herbal and nutty tones. This dish is perfect for both a cozy home dinner and a festive feast.

Bring a pot of salted water to a boil and add the rice. Cook as instructed on the package, then drain, return to the pot, and cover with foil to keep warm.
- Long grain rice: 200 g

Cut the pork tenderloin in half lengthwise, then dice it into 2 cm cubes. Dice the onion and pepper into 2 cm cubes. Peel and thinly slice the ginger and garlic. Chop the chili. Tear the leaves from the cilantro sprig, set aside, and finely chop the stems.
- Pork tenderloin: 200 g
- Red onion: 1 head
- Yellow bell pepper: 1 piece
- Garlic: 2 cloves
- Ginger: 100 g
- Chili pepper: 0.5 piece
- Coriander: to taste

Heat a wok or large skillet. Pour in some peanut oil, add the pork, sprinkle with five-spice mix, and stir. Fry for a few minutes until a brown crust forms. Transfer the meat to a separate bowl using a slotted spoon. Wipe the wok with a paper towel and return it to the heat. Once hot again, add a couple of tablespoons of peanut oil and all the chopped ingredients. Stir-fry for about 2 minutes. Add cornstarch and 2 tablespoons of soy sauce. After 30-40 seconds, add the pre-cut pineapple pieces with juice, the pork, and balsamic vinegar. Season with black pepper.

- Balsamic vinegar: 2 tablespoons

Place rice and lettuce leaves on plates. Top with pork and vegetables, sprinkle with sesame and cilantro leaves.
