Mix the marinade: pour wine and vinegar into the honey, add cumin and oregano, and whisk with a fork until emulsified.
- Honey: 1 teaspoon
- Dry white wine: 0.5 glass
- Wine vinegar: 1 tablespoon
- Ground cumin (zira): to taste
- Oregano: to taste

Cut the meat across to the bone, rub with salt, pepper, and marinade. Place each shank on a layer of baking paper (and it on 2 layers of foil), add tomatoes, onions, herbs if desired, and close on all sides.
- Lamb shanks: 4 pieces

Cook in the oven at 200°C for 20 minutes, then at 150°C for another 1.5 hours. Serve with lemon and herbs.
