Cook the rice in boiling water until done. Drain the water.

Meanwhile, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken fillet and fry for 3 minutes on each side. Transfer to a plate.

In the same pan, heat the remaining oil and sauté the finely chopped onion and diced red pepper, stirring, for 5 minutes.

Then add the minced garlic and anchovy fillet. Cook for another minute, breaking up the anchovies.

Then add tomato paste, tomatoes, vinegar, chopped olives, oregano, salt, and pepper. Cover and cook over medium heat for 10 minutes. Return the chicken to the pan, cover, and cook for another 3 minutes.
