Vegetable sach with lamb and chicken

Sach with lamb and chicken is a traditional Azerbaijani dish that impresses with its rich flavors and aromas. The name 'Sach' comes from the special metal pan it is cooked in. The combination of lamb and chicken gives the meat richness and tenderness, while vegetables infused with saffron aromas add a light sweetness and freshness to the composition. Frying in tail fat gives the dish a unique Eastern color. It is customary to serve sach on Armenian lavash, which absorbs the juices of the ingredients, becoming incredibly tasty. We fry the tail fat, add lamb to the hot fat, fry for 5 minutes, and then add chicken.
- Fat tail fat: 200 g
- Lamb loin: 200 g
- Chicken: 200 g

Then we add the vegetables in turn: potatoes, eggplants, bell peppers, mushrooms, onions, tomatoes, and a pinch of saffron. It cooks for 10-15 minutes.
