Cut the meat into small pieces and place it in a bowl. Add 2 tablespoons of olive oil, lemon juice and zest, wine, oregano, 3 minced garlic cloves, bay leaf, and a bit of black pepper. Mix, cover, and refrigerate overnight.
- Lamb fillet: 1 kg
- Olive oil: 3 tablespoons
- Lemon juice: 4 tablespoons
- Lemon zest: 2 teaspoons
- Dry white wine: 125 ml
- Oregano: 2 teaspoons
- Garlic: 5 clove
- Bay leaf: 2 pieces
- Ground black pepper: to taste

Pour the yogurt with the remaining minced garlic into a bowl, mix well, and let it sit for 30 minutes.

Skewer the meat on 8 skewers and grill, brushing with remaining oil, for about 7-8 minutes. Serve with yogurt.
