To prepare mint pesto, blend toasted walnuts (baked for 10 minutes), finely chopped mint, parsley, salt, feta, garlic, and 60 milliliters of olive oil.
- Crushed walnuts: 2 tablespoons
- Fresh mint: 1 bunch

Coat the lamb fillet with olive oil and a mixture of salt and pepper.

Place the lamb on a preheated baking tray and send it to the oven for 20-30 minutes. About 4-5 minutes before it's done, take out the meat, brush it with a little pesto, and continue baking until ready.
