Pork and Potato Roast

Wash and peel the potatoes and carrots. Cut the potatoes into large cubes and the carrots into thin slices. Chop the onion finely.

Sauté onion and potatoes with carrots in a small amount of vegetable oil until half-cooked. Add salt and pepper.

Wash and dry the meat (preferably pork with a little fat). Cut into small pieces and fry in a little vegetable oil until golden brown. Pour a little broth into the pan, add salt. Simmer for 5-7 minutes.

Layer meat and vegetables in portioned ceramic pots suitable for oven cooking. Pour the remaining broth over it, add a bay leaf and peppercorns. Place the pots in an oven preheated to 180 degrees and bake for 30-40 minutes.

While the roast is cooking in the oven, chop the garlic and finely chop the parsley. In a shallow bowl, mash the garlic and parsley together. When the roast is ready, serve it in individual pots, sprinkled with the mashed garlic and parsley on top.
