Select fish of equal size, clean, gut, rinse, salt, and pepper.
- Fish: 250 g
- Salt: to taste
- Ground black pepper: to taste

Coat in flour and fry in oil on both sides until golden brown.

Serve the pike perch on a plate, garnished with parsley sprigs and lemon slices. Lemon can be replaced with slices of pickles.
