Chicken stewed with olives is a refined dish of Russian cuisine that combines the rich flavor of chicken meat with aromatic notes of olives, tomatoes, and white wine. Historically, such recipes spread through trade routes connecting Russia with Europe, where Mediterranean ingredients like olives and olive oil became available in Russian cuisine. The dish impresses with its depth of flavor: the chicken is infused with garlic oil, browned, and then simmered in a tomato-wine sauce, acquiring a tender texture. It is best served hot, complemented by fresh herbs and a piece of rye bread. This is a wonderful treat for a cozy family dinner or special occasion, highlighting the balance of softness and spiciness.
