Boil 2 liters of water. While the water is boiling, wash and sort the spinach. Set aside a few small leaves for decoration.

Shake off the water from the spinach, chop it and place it in a blender with peeled garlic, add cream and blend well until smooth.

Roast pine nuts in a dry pan.

Heat vegetable oil in a deep pan, pour in the spinach-garlic mixture and warm it over low heat, stirring constantly without letting it boil. Add a handful of pine nuts.

Boil the spaghetti for half the time indicated on the package. Drain the water, leaving 1 cup for the sauce. Transfer the spaghetti to a pan with the sauce, add a cup of the cooking water, lemon juice, salt, mix well and cook over medium heat for the remaining time plus 2 minutes, stirring occasionally.

Place the cooked spaghetti on a plate, garnish with spinach leaves and remaining nuts, and optionally sprinkle with cheese and ground black pepper.
