Catfish in kindzmari

Dzmari means "vinegar", and kin means "cilantro". Catfish is a rather strange fish, a bit cottony. When it is cooked poorly, it feels like you are chewing a washcloth. But if you cook catfish correctly, it turns out very tasty. Catfish in kindzmari is exactly that case.

Clean the catfish and place it whole in a shallow pot with salted water, ensuring the water covers the fish. Add a bay leaf and 1 onion, and boil for 30-40 minutes. Then remove the catfish and save the broth for the sauce.
- Catfish: 500 g
- Onion: 1 head
- Bay leaf: 2 pieces
- Sea salt: to taste

We let the fish cool down, and then we cut it into pieces.

Preparing the sauce: dilute wine vinegar with cold fish broth and add a lot of finely chopped cilantro; mix everything.
- Wine vinegar: 0.5 glass
- Coriander: 1 bunch

Pour the sauce over the fish cut into portions. Let it marinate for 1.5–2 hours.
