Absolute meat porridge is a true embodiment of cozy gastronomy, blending rich flavors of meat and mushroom notes. The author's recipe reveals the depth of the flavor palette with creamy butter, aromatic beef, and melting wagyu fat. Buckwheat absorbs this rich bouquet, becoming juicy and rich. Mushroom broth enhanced with white miso paste adds a subtle umami note to the dish, transforming it into an exquisite yet homely meal. The finishing touch is oven braising, which makes the porridge's texture even more tender while creamy butter adds velvetiness. This dish is perfect for leisurely enjoyment that unveils the full depth of taste sensations, especially on cool evenings.

First, sauté the onion in butter, then add chopped beef - for example, picanha steak or any fattier cut. Add salt.
- Onion: 150 g
- Butter: 100 g
- Beef: 300 g

Pour the grains and let them soak in oil. Pour in mushroom broth seasoned with miso, bring to a boil, cover with a lid and cook on low heat for about ten minutes without stirring. Then transfer to an oven preheated to 70 degrees. After fifteen minutes, take it out without letting it cool and add more butter.
- Buckwheat groats: 500 g
- Butter: 100 g
- Mushroom broth: 1200 ml
- White miso paste: 100 g

Top with thinly sliced wagyu fat - it will melt and become transparent. Regular village pork fat won't disappoint either. Add some vegetables, like pickled asparagus and broccolini. But pickled or salted cucumbers will also work very well.
- Lard: 200 g
