Preheat the oven. Set the oven to 180 degrees.

Bake the zucchini. In a large bowl, place chopped zucchini, garlic powder, and add coconut oil. Mix well. Spread in a single layer on a deep baking tray. Bake for 20-25 minutes. When the zucchini turns golden brown, remove from the oven and transfer to a serving bowl. Sprinkle with herbs, feta cheese, chopped parsley, add lemon juice, sea salt, and red pepper (optional).
