Chakhokhbili with adjika

Chakhokhbili with adjika is a vibrant Georgian dish infused with the aromas of spices and fresh vegetables. Historically, it originated as a way to prepare game, but over time the main ingredient became chicken. Slow-cooked in its own juices with juicy tomatoes, peppers, and spicy adjika, it acquires a rich, slightly spicy flavor with a hint of sweetness from bell peppers. Uccho-suneli and coriander give the dish traditional Georgian notes. Chakhokhbili pairs perfectly with lavash or fresh bread.

Cut the chicken into small pieces. Place in a pot (preferably thick-walled), add vegetable oil and salt. Cover with a lid and simmer on very low heat for about 20 minutes. No water is needed.
- Chicken: 1.6 kg

While the chicken is stewing, finely chop 4 onions and fry them separately in vegetable oil. Add to the chicken after 20 minutes of stewing.

Put 2 tablespoons of tomato paste in the pan where the onion was fried and sauté it for 1 minute over high heat. Add 4 tomatoes, chopped into small pieces, and fry them together for another 2 minutes. Then add the sauté to the chicken and onion.

Chop both sweet peppers and add them to the pot. If necessary, add water. The chicken and vegetables should not be completely covered with liquid.

Add 1 teaspoon of adjika, chopped hot pepper, and half a bunch of chopped parsley and cilantro. Continue to simmer for 25-40 minutes until the chicken starts to shred.
- Adjika: 1 teaspoon

When the chicken is ready, turn off the gas and add spices and salt. Add finely chopped fresh herbs - cilantro and parsley. Mix everything and cover with a lid. After 10 minutes, chakhokhbili can be served.
