Make cuts on the skin. They should be deep enough not to reach the meat, otherwise it will burn. Make the cuts on the skin about one centimeter apart.

Transfer the meat to a baking dish. Generously rub the skin with sea salt, add grated garlic and lemon juice on top. Then drizzle the skin with vegetable oil and spread it over the entire surface with your hands.

Place the brisket in the oven on convection mode at 220 degrees for 25-30 minutes.

After 25 minutes, the skin will start to brown intensively. The temperature setting needs to be changed: set it for 1.5 hours at 140 degrees in convection mode.

Prepare the sauce. Cut the apples into medium wedges, peel and core them, place in a pot, add water (3-4 tablespoons), cover with a lid and simmer for 10-15 minutes. The apples should become soft (they are ready when they start sticking to the bottom).

Final stage of meat preparation. Put it back at 220 degrees for 15 minutes to give the crust a finishing touch.
