Cut the potatoes into small cubes. Blanch the tomatoes, peel them, and chop the flesh finely. Chop the greens coarsely.

Pour vegetable oil into a thick-bottomed pot, add finely chopped onion, and sauté until transparent.

Add potatoes, pour in 0.5 cup of water, and simmer uncovered over medium heat for about 10 minutes.
