    Buy a lamb leg. If you don't plan to cook it right away and put it in the fridge, take the meat out a couple of hours before cooking to let it reach room temperature.

    Cut the garlic cloves in half to make six pieces.

    Make small cuts with a knife in the soft parts of the leg (six cuts) and place half a clove in each.

    Rub the leg with salt, pepper, thyme, and rosemary. Then with olive oil.

    Preheat the oven to 80 degrees.

    Place the leg on a baking tray and put it in the middle of the oven for 30 minutes.

    Then increase the temperature to 120 degrees and bake for another 30 minutes.

    Then increase the temperature to 180 and keep the lamb leg for another 15 minutes. During this time, every 3-4 minutes, take out the tray and baste the leg with its own juices.

    In total, the leg should be in the oven for 1 hour and 15 minutes.
