Grind the beef, fat, and onion through a meat grinder twice. Add salt and spices to taste, mix, and refrigerate for a couple of hours.

Cut chicken breasts and pork neck into large pieces and marinate separately with salt and peppers, also marinate lamb loin. Leave for a couple of hours in a cool place.

Take as much minced meat as fits in your hand and shape it into a sausage on the skewer.

Heat the grill and cook the meat until done. Grill the vegetables whole, peel the cooked eggplant, pepper, and tomato, chop them coarsely and serve as a salad garnished with chopped greens. Also serve sliced red onion rings with the shashlik.
