Cut the chicken (1–1.5 kg) into pieces, season with salt and pepper. Dredge in flour.
- Chicken: 1 piece
- Wheat flour: 3 tablespoons
- Salt: to taste
- Ground black pepper: to taste

Slice the onion into rings, chop the garlic coarsely, remove the leaves from the rosemary sprig, and mix everything. Sauté 2/3 of this mixture in olive oil. Add pieces of chicken and fry until they are nicely browned.

Pour everything with wine and simmer in an open saucepan for an hour.
- White wine: 1 glass

Shortly before the end of cooking, add vinegar, the remaining mixture of onion, garlic, and rosemary, as well as olives. Simmer for another 5 minutes and serve.
