Meat Hedgehogs

A textbook dish of Soviet cuisine - meatballs with rice under the code name "Hedgehogs". Long-grain rice plays the role of needles. The dish is good because it is very easy to prepare, and also contains approximately equal amounts of proteins and carbohydrates. They can be served without a side dish, with the same sauce in which the "Hedgehogs" were stewed.

Chop one onion
- Onion: 2 heads

Mix it with the minced meat.
- Mixed mince: 500 g

Add rice, eggs, salt, and pepper to taste. Mix well.
- Long grain rice: 100 g
- Chicken egg: 2 pieces
- Salt: to taste
- Ground black pepper: to taste

Chop the second onion, grate the carrot on a coarse grater.
- Onion: 2 heads
- Carrot: 1 piece

Heat vegetable oil in a deep pan and fry the onion until it becomes transparent.
- Vegetable oil: 30 ml
- Onion: 2 heads

Add the carrot, stir-frying for a couple more minutes.
- Carrot: 1 piece

Add tomato paste to the vegetables.
- Tomato paste: 50 g

Pour a glass of water, add a little salt and stir.
- Water: 250 ml
- Salt: to taste

Form equal-sized balls from the minced meat, place them in a pan, and cover with a lid.
- Mixed mince: 500 g

Cook for 30–40 minutes on low heat.
