Salmon with vegetables is a refined dish of Russian cuisine that combines tender salmon fillet with aromatic vegetables and spicy herbs. Cut the salmon into pieces and sauté in olive oil for about 5 minutes, until it starts to break apart. Do not overcook.
- Salmon fillet: 800 g
- Sour cream: 100 g

Chop or grate the vegetables except for the potato and one tomato, fry them in a pan or on a grill, then mix.
- Onion: 1 piece
- Carrot: 1 piece
- Zucchini: 1 piece
- Sweet pepper: 1 piece

Peel the tomato, blend it with garlic and herbs, add to the vegetable mixture and simmer.
- Tomatoes: 1 piece

Layer half of the vegetables in a baking dish, then salmon, followed by potatoes, top with the remaining vegetables, spread with sour cream, cover with foil and bake in the oven at 180 degrees for 1 hour.

Check the readiness of the potatoes. Sprinkle grated cheese on top and send it back to the oven for another 5 minutes.

You can use khmeli-suneli and oregano as spices. If the zucchini has a lot of liquid, it should be squeezed before frying. If the salmon is overcooked, there's no need to squeeze the zucchini and you can add 2 tomatoes.
