Fried Batata Harra Potatoes

Batata Harra is a Lebanese version of fried potatoes. Spices add authenticity to this simple dish: cumin, coriander and cayenne pepper, which go into the hot oil in a frying pan before the main ingredient. At the end, be sure to add cilantro, lemon juice and garlic.

Prepare all the ingredients.

Peel the potatoes and boil them whole in salted water until half-cooked, which will take 10-15 minutes depending on the size of the potatoes.
- Potato: 1 kg
- Salt: to taste

Drain the water and let the potatoes cool. Then cut them into medium cubes.
- Potato: 1 kg

In a large skillet, heat 80 ml of olive oil.
- Olive oil: 160 ml

Add coriander, cumin, and cayenne pepper, and lightly heat to release the spices' aromas.
- Ground coriander: 0.5 teaspoon
- Ground cumin (zira): 0.5 teaspoon
- Cayenne pepper: 0.5 teaspoon

Then add the potatoes, season with salt and pepper, and mix well so that the fragrant oil coats all the potatoes.
- Potato: 1 kg
- Salt: to taste
- Ground black pepper: to taste

Fry until golden brown.

At the end, add garlic, lemon juice, and cilantro.
- Garlic: 2 cloves
- Lemon juice: to taste
- Coriander: 20 g

Stir and remove from heat.

Serve decorated with cilantro leaves.
