Prepare the cream: bring the liqueur to a boil, then add the gelatin; mix everything.

Then beat the yolks and powdered sugar until white foam forms and add to the prepared ricotta and liqueur mixture. Also add the whipped cream.

- Powdered sugar: 200 g
- Ricotta cheese: 500 g
- Cherry liqueur: 120 ml
- Cream 35%: 250 ml

Prepare sugar syrup and mix it with coffee.
- Sugar syrup: 100 ml
- Natural coffee: 200 g

Take 20 g of the prepared liquid and soak 20 g of savoiardi cookies in it.
- Sugar syrup: 100 ml
- Savoiardi cookies: 20 g

Then take it out and shape it into a block. Layer in the mold: cream, then soaked cookies, and top with cream.

Prepare cherry sauce: add sugar and water to cherries, place on the stove and bring to a boil. Skim off the foam, add starch soaked in liqueur. Bring to a boil.
