Rhubarb kvass is a refreshing drink with a slight sourness rooted in Russian cuisine. Cut the rhubarb stalks into pieces, place them in a pot, cover with water, and boil until soft. Strain.
- Rhubarb: 1 kg
- Water: 5 l

Pour sugar syrup into the broth, add yeast, and mix.
- Sugar syrup: 500 ml
- Fresh yeast: 25 g

Cover with a napkin and let the broth steep for a day. Strain again, pour into bottles, and seal.

The kvass will be ready in 2-3 days. Store in a cool place.
