Concentrated cherry compote

Compote appeared in Russian culinary reference books in the 18th century, before it, Russia had its own drinks made from fruits and berries - vzvar (or uzvar) and mors. Now uzvar, compote and mors are often confused with each other, although in fact, ompot is not just berries and fruits boiled with sugar.

Remove the stems and leaves from the cherries. The berries should be ripe, as unripe ones have excess acidity in taste, which is not needed in compote. There is no need to remove the pits from the cherries.

How to wash cherries under running water.

Then pack the berries into jars. There's no need to sterilize the jars, as the cherries will be poured with boiling water, and everything will be sterilized on its own.

The lids must be washed and sterilized. For this, they should be boiled for five minutes. The lids must be completely covered with water.

Now fill the jars to the top with boiling water and cover them with plastic lids with holes. After that, leave for 5-7 minutes: during this time, the berries are blanched and sterilized (and so are the jars). When the jars are warm enough to hold comfortably, pour the water into a pot.

Add 1/3 teaspoon of citric acid to a liter jar.

Add sugar to the water drained from the jars, place it on the heat, bring to a boil and wait for the sugar to dissolve. Pour the resulting syrup back into the jars. Close them with lids and cover with a towel. Jars with screw caps should not be turned over; only those sealed with a machine should be turned.
- Sugar: 300 g

The compote will be ready in a couple of weeks. During this time, the berries will absorb the sugar, and the syrup will become thick and dark. It is best to store such compote for no more than a year. Over time, it will turn a rich ruby color. The compote will be concentrated like thick syrup. Before drinking the compote, it should be poured from the jar into a pot, diluted with water to taste, and brought to a boil.
