There is no canonical taste, since the honey and spices used in gingerbread often change their properties. But the essence is the same - crumbly gingerbread dough, fragrant, tart. And another advantage of gingerbread is that you can endlessly experiment with it - easily, playfully, adding cinnamon, ground cloves, or something else.
