Meat kulebyaka with mushrooms and buckwheat

A pie with several fillings, which are separated by pancakes - this is about kulebyaka. The famous Russian pastry was eaten by both the poor and the rich. Only the higher class had more substantial fillings. You can put anything and as much as you want in a kulebyaka - we decided to make it with meat, buckwheat and mushrooms.

Mix warm milk with sugar and yeast, let it sit for 10 minutes. Then add one egg, softened butter, and 3 grams of salt, mix and gradually add flour.
- Milk: 250 ml
- Dry yeast: 10 g
- Sugar: 60 g
- Chicken egg: 2 pieces
- Butter: 50 g
- Wheat flour: 480 g
- Salt: to taste

Knead elastic dough, place it in an oiled bowl, cover with a towel, and leave in a warm place for an hour.
- Melted butter: 70 g

Cut the meat into small pieces and boil for an hour.
- Beef: 300 g

For the mushroom filling, chop the onion and mushrooms into cubes of the same size.
- Onion: 2 heads
- Champignons: 300 g

Fry the onion in vegetable oil first, then add the mushrooms, frying for 10 minutes while stirring. Season to taste and let cool.

Boil the buckwheat until ready, it will take 15-20 minutes.
- Buckwheat groats: 100 g

Pass the boiled meat through a meat grinder. In a pan, sauté one finely chopped onion in vegetable oil until transparent, then add the minced meat and some broth from the meat, seasoning with salt to taste. Simmer for 10-15 minutes, then remove from heat and let cool.

Knead the prepared dough, leave a small piece for decoration, and roll out the larger part on a floured surface. Place two pancakes in the center and brush them with melted butter.
- Pancakes: 8 pieces

Place the meat filling on them. Cover with two pancakes, grease them with butter, and add the mushroom filling on top. Again cover the filling with pancakes, grease them with butter, add buckwheat, cover it with pancakes and grease them with butter. Seal the kulebyaka by joining the free edges of the dough.

Turn the kulebyaka onto a baking sheet seam side down, brush it with egg, and make decorations from the reserved dough. These can be simple crossed strips or roses with leaves; brush the decorations with egg as well. Make several holes in the kulebyaka using a skewer.

Send to the oven preheated to 180 degrees for 35-40 minutes.
