Vatrushki

The iconic example of Slavic baking is vatrushki. We are used to those with cottage cheese, but they can be with all sorts of fillings - from potatoes to jam. For "Golden Thousand" we filmed a recipe for pies, of course, with cottage cheese.

Prepare the necessary ingredients

Mix warm milk with yeast and 1 tablespoon of sugar, add 150 grams of flour, stir and place the mixture in a warm place for 15 minutes.
- Milk: 250 ml
- Dry yeast: 10 g
- Sugar: 200 g
- Wheat flour: 450 g

Mix the dough starter and 2 eggs.
- Chicken egg: 3 pieces

Add softened butter, 0.5 teaspoon of salt, 85 grams of sugar and mix.
- Butter: 100 g
- Salt: 0.5 teaspoon
- Sugar: 200 g

Add the remaining flour and knead the dough. Cover with plastic wrap and place in a warm spot for the dough to rise. This will take 30–60 minutes.
- Wheat flour: 450 g

Knead the risen dough again, cover it with plastic wrap, and let it rise once more. This will take about another 30 minutes.

For the filling, mix cottage cheese with sugar, vanilla sugar, and sour cream.
- Cottage cheese: 500 g
- Sugar: 200 g
- Vanilla sugar: 2 teaspoons
- Sour cream: 100 g

Form fifteen to twenty balls from the dough, place them on a baking sheet, and flatten them slightly.

Brush them with beaten egg, make indentations in the buns, and fill them with cottage cheese filling.
- Chicken egg: 3 pieces

Send the cheesecakes to the oven preheated to 180 degrees for 20-25 minutes.
